This temperature sensor probe is located inside of the oven range towards the back.  It senses the temperature inside the oven and communicates with the circuit board and oven elements to let the oven know when it is at the proper temperature.  
If your oven isn't heating properly, getting too hot, not getting hot enough or not maintaining temperature correctly this could be your problem.
